Roasted Cauliflower with Lemon-Parsley Dressing
serves 4
Ingredients
- 1 hd cauliflower, florets
- 1 C parsley leaves, minced
- 2 T lemon juice
- olive oil
Instructions
- Coat the florets with olive oil, season, then roast at 425.
- Whisk the olive oil into the lemon juice until emulsified, mix in the parsley, then season to taste.
- Toss the florets in the dressing, plate and serve.
